class=\"wp-block-heading has-text-align-center\"><strong>Tamales de frijol y tamales de an\u00eds para los muertitos<\/strong><\/h2>\n\n\n\n<p class=\"has-text-align-center\">La tradici\u00f3n de D\u00eda de muertos se vive a\u00f1o con a\u00f1o en los primeros d\u00edas de noviembre en M\u00e9xico y algunos pa\u00edses de centro am\u00e9rica.&nbsp; Cada familia recuerda y abraza a sus seres queridos, que vienen del lugar del reposo a pasar un rato junto a los vivos.&nbsp; Las costumbres var\u00edan seg\u00fan el lugar, pero nunca falta el aroma y color de las flores de cempas\u00fachil, las velas, los altares y ofrendas con alimentos y bebidas favoritas de los difuntos, el pan de muerto y el papel picado.&nbsp; Los panteones se visten de color y m\u00fasica mientras los vivos se acercan a convivir con los muertos, a ofrecerles una canci\u00f3n o un taquito.&nbsp;<\/p>\n\n\n\n<p class=\"has-text-align-center\">Desde tiempos antes de la colonia, los tamales con diversos rellenos han formado parte de la ofrenda de muertos.&nbsp; En esta ocasi\u00f3n colaboramos con la ofrenda de la casa, ayudando en la preparaci\u00f3n de los tamales de frijol y de an\u00eds para acompa\u00f1ar el delicioso pipi\u00e1n que le encantaba en vida a mi suegro.&nbsp; Ambos son tamales muy sencillos, que junto a los sabores de platillos elaborados como el pipi\u00e1n o el mole se complementan de maravilla.&nbsp; Estos tamales son especiales porque a diferencia de otros que se preparan a partir de un polvo de ma\u00edz cernido, se elaboran con masa de ma\u00edz reci\u00e9n molida en el molino.&nbsp; La masa se mezcla con manteca de cerdo (o manteca vegetal) y sal.&nbsp; Luego se separa en dos tantos para hacer los tamalitos de frijol y los de an\u00eds.&nbsp; Nosotros ocupamos 1 kilo de masa, \u00bc kg de manteca de cerdo y sal al gusto.&nbsp; Con esta mezcla nos salieron 33 tamales peque\u00f1os.<\/p>\n\n\n\n<p class=\"has-text-align-center\">Para estos tamales es indispensable el metate, donde se muelen las hojas frescas de aguacate pasadas por el comal y los frijoles negros del d\u00eda para unos, as\u00ed como el an\u00eds para los otros.<\/p>\n\n\n\n<figure class=\"has-text-align-center\">Para los tamalitos de frijol: Se mezcla la hoja de aguacate molida con el frijol molido.&nbsp; Se extiende la masa de ma\u00edz sobre el metate o sobre sobre la mesa, encima de un papel encerado. &nbsp;Se embarra el frijol molido encima de la masa, y se enrolla sobre s\u00ed misma hasta tener un rollo de masa con frijol adentro.&nbsp; Una vez formado el rollo, se toman porciones con la mano y se colocan adentro de la hoja de ma\u00edz o <em>totomoztle, <\/em>previamente lavada.&nbsp; Los tamalitos de frijol se envuelven de una forma muy particular:&nbsp; Se toma el extremo del tamal donde van las puntas del totomoztle y se enrollan, como envolviendo un dulce, luego ese mismo rollito se inserta adentro del extremo del tamal, dej\u00e1ndolo con su apariencia tradicional.<\/p>\n\n\n\n<p class=\"has-text-align-center\">Para los tamalitos de an\u00eds: Se mezcla la masa preparada con el an\u00eds molido.&nbsp; Se toma una hoja de totomoztle previamente lavada, y se le embarra una peque\u00f1a porci\u00f3n de masa.&nbsp; Estos tamalitos se envuelven diferente a los de frijol: se doblan los lados del totomoztle hacia dentro, y luego la punta sobre los bordes, terminando con un tamalito de forma rectangular.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-2 class=\"has-text-align-center\">Finalmente se coloca agua en una vaporera y se pone una cama de totomoztle en tiritas, donde luego se acomodan los tamales para su cocci\u00f3n.&nbsp; Los tamalitos de an\u00eds se cocieron en una hora y los de frijol en una hora y cuarto.&nbsp; La forma de saber que est\u00e1n cocidos es abrir uno, si el tamal formado se desprende completo de la hoja, quiere decir vivos en nuestros corazones.<\/p>\n\n\n\n<!--nextpage-->\n\n\n\n<h2 class=\"wp-block-heading has-text-align-center\">Corn &#8220;<em>Morado&#8221;<\/em><\/h2>\n\n\n\n<p class=\"has-text-align-center\">This is a story of corn and roots and how my family, a planting family, has embarked in the journey of making <em>Maiz morado de Ixtenco, Tlaxcala,Mexico<\/em> (purple corn from Ixtenco, Tlaxcala, Mexico) part of our lives.&nbsp; This amazing heritage corn came to us the same way corn was developed and has migrated throughout the Americas and the world:&nbsp; through the rough, generous, loving hands of corn breeders that see the rough, generous, and loving value of these precious seeds.&nbsp;<\/p>\n\n\n\n<p class=\"has-text-align-center\">San Juan Ixtenco is a small, rural town in central Mexico, next to the magnificent <em>Matlalcueye <\/em>(Malinche volcano) on the west valley of Tlaxcala.&nbsp; It is a place of <em>Otomi <\/em>roots and a vibrant corn culture.&nbsp; Families in Ixtenco hold their heritage seeds close to their hearts; some have been the proud stewards of the <em>maiz ajo (pod corn)<\/em> and <em>morado<\/em> landraces for generations. The whole town gathers yearly for a seed blessing ceremony in which the seeds that will be planted that season are placed in baskets decorated with flowers, along with figurines of baby Jesus, representing love, abundance, and what is sacred in the home.&nbsp; The people of Ixtenco also organize several events throughout the year to share their traditions, food, and knowledge with the public and to promote corn culture.<\/p>\n\n\n\n<div class=\"wp-block-jetpack-slideshow aligncenter\" data-autoplay=\"true\" data-delay=\"3\" data-effect=\"slide\"><div swiper-pagination-white\"><\/div><\/div><\/div>\n\n\n\n<p>Through our work with Rooting Though Corn, Planting families project in Mexico, we had the opportunity to meet Cornelio Hernandez Rojas, a farmer, anthropologist and heritage corn advocate native to Ixtenco.&nbsp; He and his wife and traditional cook, Mrs. Maria Teresa Solis, welcomed us into their home, shared some <em>atole morado<\/em> and <em>tamales<\/em> with us, and took us to the fields where the family grows several varieties of corn and other products of the milpa.&nbsp; We were introduced to <em>maiz morado<\/em>, a corn variety bred and improved by Cornelio, as well as many other colorful and interesting varieties displayed in his home.<\/p>\n\n\n\n<p class=\"has-text-align-center\">After several other exchanges with Cornelio and his family, always tremendous learning experiences, I finally worked up the courage to ask him for some seeds for the sustenance of my family and other planting families in the project.&nbsp; His response was heartwarming.&nbsp; He not only shared some white, yellow, pink, and blue corn with us, he generously shared some <em>morado<\/em> seeds.&nbsp; We received the seeds with great joy and expectation, from his loving hands into the hands of three generations in my family: my daughter, my mother-in-law, and my own.&nbsp; A seed is a gift of creativity, a gift of endurance, a gift of livelihood and accountability.&nbsp; And here started <em>morado\u2019s<\/em> journey into our home and land in Santo Tomas Chautla, forty minutes west of the city of Puebla, Mexico, and the beginning of the <em>Mixteca poblana.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center\">Morado was well received in a blessing ceremony, as is our tradition to give thanks to the Earth and ask permission to work the land.&nbsp; As we acknowledged the soil, the underground waters, the rain, the sun, the wind, the plants and animals in the space, we also recognized our limitations as humans and our part in the life and death cycle of all living beings.&nbsp; With each ceremony, we recommit to learning and giving back, and to caring for the land as part of our family.&nbsp; So, after all these great intentions, what could go wrong? However, ants and grasshoppers also thought it was delightful.&nbsp; The issue of dealing with devastating pests like ants and grasshoppers is an ongoing challenge and threat to everything we plant.&nbsp; We do not want to use harsh chemicals that will harm the ecosystem, but we also want our crops to bear fruit and produce.&nbsp; We saw trails of ants climbing up the corn stalks, biting the leaves and even taking the flowers from the tassels at some point.&nbsp; A few plants suffered major damage from this, but corn is such a resilient plant that even the damaged stalk set ears and produced corn.&nbsp; Meanwhile the grasshoppers ate the tomatillos, squash, navy beans, and any volunteer plants that had decided to grow in the <em>milpa<\/em>.<\/p>\n\n\n\n<p class=\"has-text-align-center\">When harvested as sweet corn, <em>morado<\/em> leaves its bold color on the hands, as if one had cut up beets.&nbsp; It is amazing to see dark purple silks, dark purple husks, stalks and even some dark purple leaves on the plant.&nbsp; In this sweet, soft stage <em>Morado<\/em> corn is simply delicious.&nbsp; We had some boiled and others on the grill.&nbsp; We are currently drying down most of it to later grind, nixtamalize and turn into masa.&nbsp; We may also try making <em>atole agrio, <\/em>a traditional warm drink made from fermented <em>morado<\/em> corn that Mrs. Solis shared with us.&nbsp; Ideally corn should dry down and fully mature on the plant, but after opening a few samples we noticed most were infested with cornworm at the tip, and if we left them, we would be harvesting bare cobs at the end of the season.&nbsp; We know by experience that some <em>Bacilus thuringiensis<\/em>, an eco-friendly bacteria sprayed on the silks and when the corn is forming is very effective against cornworm; but we wanted to observe this first planting without intervention.&nbsp; We will definitely intervene next season\u2026 with <em>Bt <\/em>and probably some chickens to eat the insects.&nbsp; We are so grateful for the advice and valuable insight received from neighbors and planting families in the area.&nbsp; Before the 21 st century, it was common to see ladies selling punche at the markets, walking<br>around with cereal bowls of this delicious, corn gelatin-textured dessert, slicing it onto a piece of paper<br>and selling it for 20 cents a piece.<br>People would also make it in their homes, especially to please their ancestors during the D\u00eda de Muertos<br>festivities. Some variations include preparing it with milk instead of water, adding clove, orange rind or<br>star anise.<br>Punche\u2019s background dates back to prehispanic times, when it was prepared with agave syrup instead of sugar. Prepared in this manner, punche is nutritious, delicious, and fulfilling. It is best when prepared<br>with native corn, such as blue or red corn. Preparing meals with heritage corn doesn\u2019t have to be<br>tedious; you will agree once you give punche a try.<br>Enjoy!<br>Ingredients<br>\u00bd kilo dry corn kernels<br>1\/3 cup sugar (optional, to taste)<br>Large cinnamon stick<br>1 L water or milk to cook<br>Water to soak corn<\/p>\n\n\n\n<p>Procedure:<\/p>\n\n\n\n<ol>\n<li>Rinse the corn and cover with water in a bowl. Leave soaking overnight.<\/li>\n\n\n\n<li>The next day, drain the water used for soaking and place corn in the blender. Add water to<br>cover half the amount of corn.<\/li>\n\n\n\n<li>Blend until you get a liquid mixture. Add more water if necessary.<\/li>\n\n\n\n<li>In a saucepan, heat up water or milk (or the desired combination of water\/milk) with the<br>cinnamon stick and the sugar.<\/li>\n\n\n\n<li>Before it boils, add the blended corn, passing it though a strainer.<\/li>\n\n\n\n<li>Cook on medium heat for an hour, stirring very frequently so that the mixture doesn\u2019t stick to<br>the bottom of the pot.<\/li>\n\n\n\n<li>The desired consistency is a thick, uniform paste, where you can see the bottom of the pot<br>when you stir.<\/li>\n\n\n\n<li>Remove immediately from the heat and pour in bowls, preferably glass or ceramic.<\/li>\n\n\n\n<li>Refrigerate for 2 hours until set.<\/li>\n\n\n\n<li>It may be served in individual bowls or in slices since the result is a gelatin texture.<\/li>\n<\/ol>\n\n\n\n<div class=\"wp-block-buttons is-content-justification-right is-layout-flex wp-container-core-buttons-is-layout-1 wp-block-buttons-is-layout-flex\">\n<div class=\"wp-block-button is-style-fill\"><a class=\"wp-block-button__link wp-element-button\" href=\"https:\/\/www.youtube.com\/watch?v=zCBuN_4Dsn8\">VIDEO HERE<\/a><\/div>\n<\/div>\n\n\n\n<p><\/p>\n\n\n\n\n\n\n\n\n\n\n\n<h2 class=\"wp-block-heading\"><\/h2>\n\n\n\n<h2 class=\"wp-block-heading\"><\/h2>\n","protected":false},"excerpt":{"rendered":"<p>Tamales de frijol y tamales de an\u00eds para los muertitos La tradici\u00f3n de D\u00eda de muertos se vive a\u00f1o con a\u00f1o en los primeros d\u00edas de noviembre en M\u00e9xico y algunos pa\u00edses de centro am\u00e9rica.&nbsp; Cada familia recuerda y abraza a sus seres queridos, que vienen del lugar del reposo a pasar un rato junto a los vivos.&nbsp; Las costumbres var\u00edan seg\u00fan el lugar, pero nunca falta el aroma y color de las flores de cempas\u00fachil, las velas, los altares y ofrendas con alimentos y bebidas favoritas de los difuntos, el pan de muerto y el papel picado.&nbsp; Los panteones se visten de color y m\u00fasica mientras los vivos se acercan a convivir con los muertos, a ofrecerles una canci\u00f3n o un taquito.&nbsp; Desde tiempos antes de la colonia, los tamales con diversos rellenos han formado parte de la ofrenda de muertos.&nbsp; En esta ocasi\u00f3n colaboramos con la ofrenda de la casa, ayudando en la preparaci\u00f3n de los tamales de frijol y de an\u00eds para acompa\u00f1ar el delicioso pipi\u00e1n que le encantaba en vida a mi suegro.&nbsp; Ambos son tamales muy sencillos, que junto a los sabores de platillos elaborados como el pipi\u00e1n o el mole se complementan de maravilla.&nbsp; Estos tamales son especiales porque a diferencia de otros que se preparan a partir de un polvo de ma\u00edz cernido, se elaboran con masa de ma\u00edz reci\u00e9n molida en el molino.&nbsp; La masa se mezcla con manteca de cerdo (o manteca vegetal) y sal.&nbsp; Luego se separa en dos tantos para hacer los tamalitos de frijol y los de an\u00eds.&nbsp; Nosotros ocupamos 1 kilo de masa, \u00bc kg de manteca de cerdo y sal al gusto.&nbsp; Con esta mezcla nos salieron 33 tamales peque\u00f1os. Para estos tamales es indispensable el metate, donde se muelen las hojas frescas de aguacate pasadas por el comal y los frijoles negros del d\u00eda para unos, as\u00ed como el an\u00eds para los otros. Para los tamalitos de frijol: Se mezcla la hoja de aguacate molida con el frijol molido.&nbsp; Se extiende la masa de ma\u00edz sobre el metate o sobre sobre la mesa, encima de un papel encerado. &nbsp;Se embarra el frijol molido encima de la masa, y se enrolla sobre s\u00ed misma hasta tener un rollo de masa con frijol adentro.&nbsp; Una vez formado el rollo, se toman porciones con la mano y se colocan adentro de la hoja de ma\u00edz o totomoztle, previamente lavada.&nbsp; Los tamalitos de frijol se envuelven de una forma muy particular:&nbsp; Se toma el extremo del tamal donde van las puntas del totomoztle y se enrollan, como envolviendo un dulce, luego ese mismo rollito se inserta adentro del extremo del tamal, dej\u00e1ndolo con su apariencia tradicional. Para los tamalitos de an\u00eds: Se mezcla la masa preparada con el an\u00eds molido.&nbsp; Se toma una hoja de totomoztle previamente lavada, y se le embarra una peque\u00f1a porci\u00f3n de masa.&nbsp; Estos tamalitos se envuelven diferente a los de frijol: se doblan los lados del totomoztle hacia dentro, y luego la punta sobre los bordes, terminando con un tamalito de forma rectangular.&nbsp; Finalmente se coloca agua en una vaporera y se pone una cama de totomoztle en tiritas, donde luego se acomodan los tamales para su cocci\u00f3n.&nbsp; Los tamalitos de an\u00eds se cocieron en una hora y los de frijol en una hora y cuarto.&nbsp; La forma de saber que est\u00e1n cocidos es abrir uno, si el tamal formado se desprende completo de la hoja, quiere decir que est\u00e1 listo.
